Glazed Sweet Potatoes


U.S. Metric Ingredients
4 lb 1.8 kg Sweet potatoes
3 fl oz 90 mL Water
6 fl oz 175 mL Light corn syrup or maple syrup
3 oz 90 g Brown sugar
4 fl oz 125 mL Orange juice
1 fl oz 30 mL Lemon juice
1 oz 30 g Butter
½ tsp 2 mL Cinnamon
tsp 0.5 mL Ground cloves
¼ tsp 1 mL Salt



  1. Scrub the sweet potatoes and boil or steam until nearly tender. Do not overcook.
  2. Spread the potatoes on a sheet pan to cool.
  3. Peel the potatoes when they are cool enough to handle. Remove dark spots. Cut into neat, uniform pieces for easy portioning. Arrange in a buttered baking pan.
  4. Place the water, syrup, and sugar in a saucepan. Stir over heat until sugar is dissolved. Add the remaining ingredients and boil until the mixture is reduced to about 12 fl oz (350–400 mL) and forms a heavy syrup.
  5. Pour the syrup over the potatoes.
  6. Bake at 350°F (175°C) until potatoes are thoroughly cooked and glazed, about 45–60 minutes. Baste with the syrup several times during baking.
