Method

Procedure

  1. Roast the onions at 350°F (175°C) until they are completely soft, 45 to 60 minutes.
  2. Cool until they are cool enough to handle. Peel.
  3. Purée the onions in a blender or food processor.
  4. Add the mustard, vinegar, and stock. Blend to mix well.
  5. Stir in the chopped parsley.
  6. Season to taste with salt and pepper
