Procedure
- Roast the onions at 350°F (175°C) until they are completely soft, 45 to 60 minutes.
- Cool until they are cool enough to handle. Peel.
- Purée the onions in a blender or food processor.
- Add the mustard, vinegar, and stock. Blend to mix well.
- Stir in the chopped parsley.
- Season to taste with salt and pepper
