Pear Salad


U.S. Metric Ingredients
    Pear mixture:
1 1 Pear, peeled and cut paysanne
½ cup 120 mL Celery, sliced very thin
4 tbsp 60 mL Golden raisins
4 tbsp 60 mL Red onion, sliced very thin and then cut into ½-in. pieces, rinsed in cold water
2 tsp 10 mL Parsley, chopped very fine
2 tsp 10 mL Capers, chopped fine
    Honey vinaigrette:
2 tbsp 30 mL Sherry vinegar
4 tsp 20 mL Honey
1 tsp 5 mL Shallot, chopped very fine
½ tsp 2 mL Garlic, chopped very fine
4 tbsp 60 mL Olive oil
to taste to taste Salt
to taste to taste Black pepper
to taste to taste Lemon juice



  1. Toss together all the ingredients for the pear mixture.
  2. Mix together the vinegar, honey, shallot, and garlic in a small bowl.
  3. Very slowly add the olive oil while beating with a wire whip (see for vinaigrette procedures).
  4. Season the vinaigrette to taste with salt, pepper, and fresh lemon juice.
  5. Add the vinaigrette to the pear mixture and toss carefully to coat the salad ingredients.
