Pear Salad

Procedure

1. Toss together all the ingredients for the pear mixture.
2. Mix together the vinegar, honey, shallot, and garlic in a small bowl.
3. Very slowly add the olive oil while beating with a wire whip (see for vinaigrette procedures).
4. Season the vinaigrette to taste with salt, pepper, and fresh lemon
