Procedure

  1. Combine the shrimp, lemon juice, oil, peppercorns, garlic, onion, bay leaf, cayenne, and salt in a stainless-steel saucepan. Add just enough water to cover the shrimp.
  2. Bring to a boil, then reduce to a slow simmer. Cook 2–4 minutes, or until just cooked through.
  3. Remove the pan from the heat and set in an ice bath to cool quickly. R
