  1. Combine the cheeses, thyme, shallot, and garlic in a small bowl and mix well with a spatula. Add salt and pepper to taste and mix again until evenly blended.
  2. Using a small round scoop, portion the cheese mixture into balls of the desired size and drop onto sheet pans lined with parchment. Freeze slightly to make the mixture firmer.
