Hearty, aromatic and filling, this pasta dish is delicious served with a simple salad of sliced ripe tomatoes and finely chopped red onion, dressed with a little balsamic glaze, salt and pepper.


  • 2 large aubergines
  • 400 g dried penne
  • 2 tbsp olive oi


  1. Pierce the aubergines twice with a sharp knife to prevent them exploding in the oven.
