Blue cheese and orange is a marriage made in heaven, and any slightly bitter leaves, such as endive or chicory, sets them off a treat. For me, the best is Belgian endive (the bullet-shaped white or purple-edged one, confusingly sold as white or red chicory), with its smooth crisp leaves. It can also stand being dressed a few hours in advance.
