It’s interesting that all over Britain we have recipes for making leftover boiled spuds delicious. I just love all those homely regional names: bubble and squeak, colcannon, rumbledethumps. These are usually made with leftover potatoes and cabbage or any other green veg that’s to hand, and may or may not be formed into cakes – sometimes just a delicious fry-up. Some contain a bit of fried bacon or a grating of cheese. And if you have leftover cooked fish or chicken, why not add that too? Th
