This is one of the most delicious ways to cook potatoes. A bit more trouble than boiling or roasting, but absolutely worth it.


  • about 4 tbsp good olive oil
  • 750 g potatoes, peeled and cut into 1.5cm (¾in) cubes


  1. Heat the oil in a large frying pan over a gentle heat. Add the potatoes and fry very slowly, shaking the pan and turning the cubes until pale brown on all sides. Add the chilli and garlic and continue frying gently until the garlic is just turning colour and the potatoes are evenly browned.
  2. Add the coriander, season with salt and pepper and serve hot.
