Mujadera, being a traditional peasant dish, is never served in smart restaurants, but it’s cooked in every Lebanese home kitchen. It’s so simple: basically a dish of lentils and rice with crisply fried onions. You can spice it up if you like, with cinnamon and allspice as I have here, or with cumin, turmeric or chilli. But I also love it unspiced, with just a heavy hit of garlic. And who doesn’t like crisp fried onions?
