Ingredients: 2 banana shallots or 1 onion, finely chopped; salt and pepper to season; a good pinch of salt; 220 g plain flour; 1 tbsp olive oil; 150 g salted butter, frozen; 1 apple, grated; 40 g dried breadcrumbs; 1 medium egg, beaten; 600 g good-quality pork sausagemeat, not too finely minced; a small handful of sage leaves, chopped; 2 garlic cloves, crushed; 1 beaten egg for brushing; 1 tsp fennel seeds to garnish

There is nothing clever about this dish – it’s just a jumbo sausage roll. But if you make your own filling, or better still make your own pastry and shape it into a fancy plait, and then serve it with a good homemade tomato sauce, it’s pretty well irresistible.
