I love this recipe. It’s not unlike a beef cannelloni or spaghetti bolognese in flavour, but it’s more fun to do, looks festive on the table – and each slice, showing the layers of pancake and fillings, makes it look much more difficult to make than it is. It also freezes well and children love it.


  • 10 French pancakes (see recipe)
  • 500 g lean minced beef
  • cooking oil for frying


  1. Following the recipe, make the pancake batter and allow it to stand while you prepare the meat sauce.
  2. Fry half the mince in a hot frying pan with a tablespoon of oil. Press the meat down in a shallow layer on the hot pan with a fish slice, leave while it sizzles and browns, then turn over and fry the other side. This takes a w
