This is a dish I thought I’d invented – until I saw Nigella had an almost identical recipe called Barbados Dream. Ah well! Make sure you buy dark muscovado sugar – its the only sugar that gives that dark treacly taste and aroma. You’ll find it in big supermarkets or health food stores. This is a popular quick pud in our house.
Lightly whip the cream. Mix with the yoghurt and spoon the mixture into four individual glasses.
Sprinkle generously with muscovado sugar and chill in the fridge for half an hour or so. The sugar will dissolve into a dark lake and, with luck, will run attractively down the inside of the glasses. If you like a bit of crunch, sprinkle a little more sugar on top before serving.
