I love ginger in anything, but especially in ice cream. Make sure you chop the stem ginger really finely and give the mix a blitz or fork-up once it is half-frozen, so that the pieces will be evenly distributed in the ice cream.


  • 85 g granulated sugar
  • 4 medium egg yolks
  • 2 tsp ground
