Meringue nears the top of my list of best Foods on the entire planet. It’s so beautiful and delicious in its simplicity and serves as a backdrop for so many different flavors and add-ins. But, as a purist, I find its angelic texture and melting sweetness ideal for showcasing—what else?—pure vanilla flavor.


  • 4 large egg whites, at room temperature
  • ¼ teaspoon cream of tartar
  • ¼ teaspoon


  • Position oven racks in the upper and lower thirds of the oven and preheat oven to 200°F. Line 2 baking sheets with parchment paper.
  • In the bowl of a stand mixer fitted with the whisk attachment, beat together egg whites, cream of tartar, an
