My first cookbook was all about homemade marshmallows, and while writing it I lived and breathed (and scrubbed my kitchen floor clean of) that sweet, bouncy confection for months on end. Even after testing dozens of exotic and delicious flavors, I still consider the classic vanilla marshmallow to be the ultimate.


  • 3 tablespoons unflavored powdered gelatin
  • cups cold water, divided


  • Coat a 9-by-13-inch baking pan lightly with cooking spray and wipe away any excess.
  • Whisk together gelatin and 1 cup of the cold water in a small bowl and l
