  • 6 fresh shiitake mushrooms, stems discarded
  • 1 teaspoon soy sauce
  • 1 teaspoon

Method

  1. Slice the mushrooms across, very finely.
  2. Combine the soy sauce, sesame oil, lemon juice and mirin, and set aside.
  3. Heat the olive oil in a small skillet and sauté the mushrooms until soft, about 2 minutes. Remove from the heat and pour the soy mixture over the mushrooms. Stir well and allow to cool completely.
