This is a delicious way to use up leftover roast chicken. With a crunchy crumb coating and a tasty soft filling this finger food is super scrummy. You can substitute sweet chilli sauce for the ketchup and add a teaspoon of soy sauce for an oriental variation.

  • 200 g/7 oz cooked mashed potatoes, cooled

Method

Put the mashed potato, chicken, spring onions, carrot, thyme, grated cheese and ketchup in a bowl and season lightly with salt and pepper. Mix to combine and mould into 10 sausage shapes.

To make the coating, put the flour in one bowl, the beaten egg in another bowl and the breadcrumbs in a third bowl. Coat each croquette in flour, then the egg, then the panko breadcrumbs.

Heat
