This is one of those foolproof recipes where everything just gets blitzed in the food processor then takes only a couple of minutes to cook. The delicious golden fritters are suitable for vegans.
Put all the ingredients (except the oil) in a food processor and blitz until finely chopped.
Heat the oil in a frying pan over a medium-high heat. Spoon 4–5 separate tablespoons of the mixture into the frying pan and fry the fritters for 1–2 minutes each side until lightly golden and cooked through. Transfer to a plate lined with kitchen paper then continue frying the rest of the mixtur
