In a quest to find the world’s healthiest food it would be almost impossible to miss out one of the best complete protein sources: quinoa. Combine it with this delicious dressing for a king-of-the-superfoods salad that is perfect for vegans, vegetarians and anyone who wants a delicious power-packed lunch to set them up for the day.
Cook the quinoa in a pan of boiling water according to the packet instructions, drain and leave to cool.
When cold, spoon the quinoa into a serving bowl. Add the remaining salad ingredients and mix to combine.
Whisk the dressing ingredients together in a small jug. Pour the dressing over the salad, season lightly with salt and pepper and stir.
