A classic Italian margherita pizza in the form of a quesadilla. The fresh flavours combined with warm melting cheese are a match made in heaven (they’re also the perfect finger food for toddlers).

Ingredients

  • 6 mini tortilla wraps
  • tsp sun-dried tomato paste
  • 60 g/

Method

Put 3 wraps on a chopping board. Spread half a teaspoon of sun-dried tomato paste over each wrap and top with the cheeses, tomato slices and basil. Put the remaining 3 wraps on top to make 3 sandwiches.

Heat the oil in a frying pan over a medium heat, add a quesadilla and fry for 2–3 minutes until lightly golden on the outside and melted in the middle. Turn the quesadilla over and fry f
