Eggs are a real food hero, packed full of nutrients. It’s so easy to whip up this quick dish – omelettes are a fantastic solution for a quick breakfast, lunch or light dinner if you find yourself short on time and in need of a quick fix.

Ingredients

  • 50 g/2 oz broccoli florets
  • knob of butter

Method

Cook the broccoli florets in a steamer for 3–4 minutes until tender.

Melt the butter in a small frying pan over a medium heat, add the spring onions and fry for 30 seconds. Beat the eggs with the milk, season with a little salt and pepper then pour the eggs into the pan, moving the egg mixture around until the egg starts to set.
