A quick simple sauce is all you need to serve alongside this beautiful fish. It’s perfect for a short-on-time supper but equally suitable for a special occasion.


  • 2 sea bass fillets, halved lengthways

Season the sea bass pieces with a little salt and pepper and coat them with flour on both sides.

Heat the oil and butter in a frying pan over a medium heat. When the butter has melted and starts to foam, add the floured sea bass and fry for 2 minutes on each side until lightly golden and cook
