These are just perfect for little fingers! The butternut squash makes the balls lovely and soft and the couscous adds a slight crunch in texture when baked in the oven.

Ingredients

  • 2 tsp olive oil
  • 100 g/ oz butternut squash, peeled and grated

Method

Preheat the oven to 200°C/400°F/Gas 6 and line a baking sheet with baking parchment.

Heat the oil in a small frying pan over a medium heat, add the squash and fry for 3–5 minutes until just softened, then remove from the heat and leave to cool.
