Kids often eat with their eyes, so here’s a great way to make salad that little bit more appealing. It squeezes in lots of different veggies too.
Cook the giant couscous according to the packet instructions.
Put the couscous in a large bowl with the remaining ingredients, mix to combine and season well with salt and pepper.
Whisk together the dressing ingredients in a bowl, pour over the salad, toss and serve.
