You can make this tasty salad in 10 minutes. It is easy to prepare the night before you need it. All you have to do is toss in the dressing in the morning and pop it in your child’s lunchbox or, even better, put the salad dressing in a small pot and let your child add the dressing just before eating.
Cook the pasta in a pan of boiling salted water according to the packet instructions, then drain.
While the pasta is cooking, steam the broccoli florets for about 4 minutes.
Meanwhile, whisk together the dressing ingredients.
Put the chopped chicken, sweetcorn, tomatoes and spring onions in a bowl together with the drained pasta and broccoli and toss with the dressing.</
