Raspberry Ripple Mini Cheesecakes

Raspberry ripple ice cream immediately evokes images of an English summer on the beach or playing in a sunshine-filled garden. I’ve taken this popular flavour (and memory) and created these mini cheesecakes as a celebration of the Great British Summertime (sometimes described as nine months of winter followed by three months of bad weather!).
