This fish soup is considered to be the queen of Russian soups. Its lovely, rich flavour is accentuated by the salty additions of Salted Cucumbers, capers and olives. If you can find sturgeon, use it instead of the halibut and turbot suggested in the recipe. If you make your own fish stock then the recipe will be even more special.

Ingredients

  • 2 onions
  • 2-3 carrots
  • 1 parsnip
  • 200

Method

  1. Finely chop the onions. Dice the carrots, parsnip and finely dice the cucumbers. Heat the oil in a large pan, add the onions and fry over a medium heat for 2-3 minutes, until softened. Add the carrots and parsnip and fry over a medium heat, stirring all the time, for 5 minutes.
