This borscht is flavoured with salo, salted pig’s lard, but you can also use Italian lardo. This Italian cured pork fat, eaten as an antipasto, is classified as a cold meat.

Ingredients

  • 4-5 medium beetroots (beets)
  • 1 carrot
  • 1 small piece celeriac

Method

  1. Coarsely grate the beetroots, carrot and celeriac. Chop the onion and finely slice the cabbage.
  2. Peel and cut the potatoes into wedges. Finely slice the pepper, discarding the core and seeds. Squeeze the juice from the lemon, and cut the beef into small chunks.
