Although the ingredients for this dish are simple, it is usually served at festive occasions. The herring fillets must be soaked overnight, so allow time to do this. You can buy ready-made forshmak in Russian delicatessens. It is delicious served with ice cold vodka.

Ingredients

  • 250 g/9 oz salted or pickled herring fillets
  • 2 eggs

Method

  1. If using salted herrings, soak the fillets in cold water overnight. The next day, rinse the herring fillets under running water and then drain.
  2. Put the eggs in a pan, cover with cold water and bring to the boil. Reduce the heat and simmer for 10 minutes. Meanwhile, heat the oil in a frying pan, add the chopped onion and fry for about 5 minutes, until softened b
