The famous Russian crab meat, charka, is sold in food shops all over the world. The high quality merits the price. However, inventive Russian housewives found a way to supplement the expensive crab meat by adding finely cut, fresh white cabbage. It is surprisingly good.

Ingredients

  • 1 wedge white cabbage, about 250 g/9 oz total weight

Method

  1. Finely shred the cabbage, discarding the thick stalk. Put in a large bowl and cover with just boiled water from the kettle.
  2. Leave the cabbage to soak for 2-3 minutes. Drain off the water and squeeze the cabbage dry with your hands, transferring the handfuls to a dry bowl as you do so. Set aside and leave to cool.
