With the possible exception of Italians, Russians are the most enthusiastic mushroom pickers in the world. The best looking mushrooms are preserved in a spicy marinade and served on the zakuski table during winter.

Ingredients

  • 500 g/1¼ lb mixed wild mushrooms, such as porcini
  • 500 ml

Method

  1. Wipe the mushrooms with kitchen paper to remove any dirt or traces of soil. If the mushrooms are large, cut them in half but leave small mushrooms whole.
  2. Put the mushrooms in a large pan, add the water and 15ml/1 tbsp salt. Bring to the boil, then reduce the heat and simmer for 30 minutes, stirring occasionally and skimming the surface.
