This Russian speciality is a puff-pastry pie filled with cured salmon, hard-boiled eggs and rice. Pastry of all kinds is very popular in Eastern Europe and it is especially enjoyed in Russia. In the times of the Tsar, elaborate pastries were sent as party invitations and the skills of a hostess were always measured by the quality of her pastry. These days, good quality, butter-rich, ready-made pastry is an acceptable substitute for homemade.
