Crisp puff pastry with a very soft cabbage filling, is a favourite dish for Russians to eat on a Saturday night when the whole family is gathered around the table.

Ingredients

  • 300-400 g/11-14 oz cabbage
  • 40-50 g/1½-2

Method

  1. Discard the outer leaves and hard stalk of the cabbage, cut in half and chop finely. Heat the butter in a medium frying pan over a low heat, add the cabbage and stir-fry for 25 minutes until softened, don’t allow it to brown. Season and leave to cool.
  2. Put the eggs in a pan, cover with cold water and bring to the boil. Reduce the heat, and simmer for 10 minutes,
