Russian suppers almost always consist of three dishes – a soup, the main dish and a dessert. To round off an evening meal, a compote is the most popular final course. You can mix the fruit ingredients to suit your own taste or what is available.

Ingredients

  • 250 g/9 oz/1¼ cups mixed dried fruits including plums, pears, apples

Method

  1. Keeping the fruit types separate, cut any large pieces of fruit into smaller chunks. Pour the water into a medium pan and bring to the boil.

  2. When the water is boiling, add the plums, pears, cinnamon sticks or bay leaves and return to the boil
