Russians love their tea and tea drinking is an ancient Russian tradition. It is popular to have parties where nothing but tea and sweet accompaniments are served. These include cherry jam, gooseberry jam and whole strawberry jam (put in the tea or eaten from special small plates), chocolates, fudge and soft spicy ginger cookies. The highlight of the tea is a cheesecake, flavoured with raisins, preserved peel and lemon.
