Hummus with a generous topping of hot fava beans is quite a popular version in Egypt and Palestine and loved all over the Middle East. I make this whenever I have leftover ful followed by a chef’s kiss. It’s damn good.
Warm the fava beans in a pan with a little olive oil. Sprinkle in the ground cumin and salt to taste.
Spread the prepared hummus on a plate or dish of your choice. Make a well and top up with the warm fava beans.
Drizzle with olive oil and a squeeze of lemon and sprinkle with za’atar. Top it up with shatta and serve with warm bread.
