An absolute delight when consumed freshly made, Egyptian ta’miyyah are the authentic ancestors of present-day falafels, made from a mixture of chickpeas and fava beans since the beginning of recorded Egyptian history.

For me, ta’miyyah sandwiches are reminiscent of my early years spent playing with other children from the neighbourhood on the old streets and souks of Jeddah. I vividly remember that the other children and I used to get 5-10 Saudi riyals as weekly pocket money, and th
