Heritage tomato and olive salad

This recipe is a display of my colourful personality, if I say so myself! Salata tamatim is a very humble salad that celebrates the freshness of local tomatoes. It is traditionally made with a gorgeous beef tomato variety grown in the agricultural plateaus surrounding the Red Sea coastline and olives from a Palestinian grove, and it is sweet, tangy and fragrant, to say the least. A match made in heaven, just like me and my dad.
