This is a seasonal, once much-prized dish due to the scarcity of red heritage carrots that only grew in Al-Ahsa’s most fertile region during winters. They were small, about the size of Chantenay carrots, bursting with flavour. But nowadays, thanks to advancements in agricultural sciences in KSA, we get medium-sized carrots.
