This condiment originated from the shores of Yemen and travelled all over the world with Yemenites wherever they went. It left the British audience in awe when I served it with Mutabbaq on MasterChef.

Vibrantly green in colour, zhoug has pungent, heady notes of fresh coriander and parsley, the nuttiness of roasted cumin and coriander seeds, a sharp, spicy kick of chillies and tartness of lemon enough to make your eyes wink. This is all enveloped in
