My first taste of a French patisserie in KSA

This recipe is an homage to one of the very first French patisseries in Saudi Arabia that opened their doors to the general public, La Fraise.

The dough for this recipe freezes very well and lasts in the freezer for up to 3 months, and so I have given a quantity of pastry crust enough to make 3 tarts about 36cm (14 inches) long. This is how I prepare it at home, so that I can quickly make tarts whenever I like, but feel free to adjust the recipe if you only want to make enough pastr
