Debyaza is a Saudi dried fruit compote made with apricots and dried fruits

“O debyaza, make it beautiful, brighten up the Eid spread”: words from a folk song often sung by the housewives of Makkah and Medina to mark the end of Ramadan and to begin the preparation of Eid al-Fitr feasting.

This whole set-up of a dessert is my modern take on a classic Hijazi dessert, debyaza – a Saudi compote made with apricots and dried fruits. To lighten it up and make it more fun, I have paired the richness of debyaza with a very light, perfumed, palate-cleansing panna cot
