This is my younger daughter’s favourite dish, but she loves anything with prawns, really. Besides pizza, nasi goreng is our family’s favourite food to serve on Friday nights, simply because it is an all-in-one dish that we can enjoy while watching a movie at home. With fried rice, you have the freedom to choose and add vegetables and/or proteins. You can also make use of any leftover vegetables from the fridge. Season it with a simple mix of soy sauce, salt and sliced chilli, and everyone will be coming back for seconds.


  • 1 tsp + 3 Tbsp vegetable oil
  • 2 eggs, beaten
  • 3 long beans or French beans, diced
  • 200 g (7 oz) prawns, peeled and deveined, leaving tails intact
  • 3 dried shiitake mushrooms, soaked in hot water to rehydrate, stems removed, caps diced
  • 3 cups cooked rice, cooled

Chilli Paste

  • 3 shallots, peeled and coarsely chopped
  • 2 cloves garlic, peeled and coarsely chopped
  • 5 dried chillies, seeds removed and soaked in hot water to rehydrate, then squeezed to remove excess water before using


  • 1 Tbsp light soy sauce
  • 1 Tbsp oyster sauce
  • ¼ tsp white pepper powder
  • Salt, to taste
  • A dash of sesame oil


  • A handful of chopped spring onions
  • 1 Tbsp crisp-fried shallots


  • Pound the ingredients for the chilli paste coarsely using a mortar and pestle. Set aside.
  • Mix the ingredients for the seasoning in a small bowl. Set aside.
  • Heat 1 tsp oil in a large frying pan over medium heat. Add the eggs and swirl to coat the entire pan. Let it set, then flip the omelette to cook briefly on the other side. Transfer to a clean dish. Set aside to cool before rolling up and slicing into long strips.
  • Heat 3 Tbsp oil in a large wok over medium heat. Add the pounded chilli paste and fry until fragrant and slightly dry.
  • Add the diced long/French beans and cook for 2 minutes. Add the prawns and mushrooms and stir-fry for 1–2 minutes.
  • Add the seasoning and cooked rice. Fry until the rice is well-mixed with all the ingredients. Taste and adjust the seasoning, if needed.
  • Dish out and garnish with the egg strips, chopped spring onions and crisp-fried shallots. Serve immediately.
