I know this sounds a weird combination, but I promise you it is absolutely divine. It is a similar dish to those that the Parsis tend to eat for breakfast, but it will also make a great snack or a comforting supper. The sweetness of the bananas dances on the palate with the spicy onions and sharp tomatoes... try it, I dare you!

Ingredients

  • 6 ripe bananas, peeled and sliced into 5mm rounds
  • juice of 1/2 lime or lemon
  • 3

Method

Place the bananas in a bowl and sprinkle with the lime or lemon juice to prevent them discolouring. Set aside.

Heat the oil into a wide, heavy-based pan over a medium-high heat until hot. Add the onions, turmeric, garlic and ginger and cook until the onions turn a light golden brown. Reduce the heat and add the chillies, chilli powder and tomato purée. Stir-fry for a minute, then add th
