  • 1 cinnamon stick
  • 5 cardamom pods

Method

Pour 1 litre of cold water into a saucepan and add the bay, cinnamon, cardamom, cloves and peppercorns. Bring to a boil over a high heat. Add the ginger and cook for another two minutes, then add the tea leaves. Return to the boil and cook for one minute, then reduce the heat to a minimum and allow
