This may look murky, but don’t worry about that; the flavours are deeply fabulous with a lovely herbaceous taste to the sauce. Sprinkle the finished dish with more herbs if the look of it bothers you. This is a great recipe for vegetarians on its own; serve with a dollop of yogurt flavoured with ground roasted cumin and roasted garlic, and some plain rice.
