The bitterness here is brilliant with any dish that is slightly sweet or rich, as it cuts through those flavours, if you come across radishes with greens, then snap them up, the leaves will be slightly bitter. If you can’t find them, you can replace them with kale or even chard.

Ingredients

  • 60 g vegetable oil
  • 1 tsp cumin seeds
  • 1 tsp

Method

Heat the oil in a wide pan until hot. Add the cumin and fennel seeds and the chillies. Once the spices begin to crackle and the chillies turn a shade darker, add the onions. Stir-fry for seven to eight minutes, until the onions turn soft and translucent.

Add the spinach, radish greens and some salt. Continue to cook and stir until all the liquid evaporates; it will take about 15 minutes
