I know this is a long-winded dish, but it is a rice of all rices. Serve it on festive occasions. Barberries are widely available in Middle Eastern stores but, if they are hard to find, use dried cranberries.

For the Spice Mix

Method

Combine all the spices for the spice mix together and store in an airtight container. You will need about 2 tsp for this recipe. Preheat the oven to 200°C/400°F/gas mark 6.

Wash the
