Put the cumin seeds into 3 small dry frying pan, place over a medium heat and stir until the seeds are slightly darker and smell aromatic. Tip into a mortar and grind to a powder with the pestle.
Once the cucumber has been grated, squeeze it to remove as much liquid as possible. Place into a bowl and add the remaining ingredients. Season with salt to taste, mix well and serve immediatel
